 Project objective

Bodegas Langa, with 150 years of expertise in winemaking, brings forward a project which aims at re-designing the wine production process. Æternum is a novel methodology which creates unique wines, defined by the vineyards microbiology, which mature eternally in an innovative container.

Albeit being the largest wine producer in the world Europe’s exportation rates are stunningly low. This is due to a surplus of low quality, non-competitive wine. To bring down excess production the European Commission invests billions of euros in programs like the grubbing of vineyards. Yet the problem subsists and recently Europe called for innovation in the wine production sector to enhance the reputation of European wines and regain market share. However, the actual wine market has reached a maturity state, with scarce differentiation among products. This is mainly due to that fact that producing high quality wine is a lengthy and expensive process with variable results. In order to further control the outcome, the process has become somewhat typified, leading to a general similarity among available wines.

Through the use of novel biotechnologies, we have created a completely novel methodology for wine production. By analysing the vineyard’s microbiome, we will develop a highly specific and low impact pest control plan. Moreover, it will allow us to select indigenous fermentation yeasts, making our wines unique. The posterior maturation of the wine along with these yeast, will enrich it with nutrients yielded by these organisms. Furthermore, our innovative container design mimics the shape of the maturation deposits. In this way, we allow an eternal maturation to take place within the bottle.
